  • Small saucepan (optional, if melting coconut oil - see note below)

Instructions:

  1. Chill the Bowl: Place your mixing bowl in the freezer for about 10-15 minutes to chill.

  2. Prepare Coconut Cream: Crucial Step: The coconut cream must be chilled overnight in the refrigerator. This separates the thick cream from the watery liquid. Scoop out only the thick, solid cream from the top of the can, leaving the watery liquid behind (you can save this liquid for smoothies or other uses). Note: Sometimes, even after chilling, the coconut cream can be a bit grainy. If this is the case, you can gently melt the scooped-out coconut cream in a small saucepan over very low heat just until melted. Then, let it cool completely and re-chill before whipping. This will create a smoother mousse.  

  3. Combine Ingredients: In the chilled mixing bowl, combine the chilled coconut cream, cacao powder, sugar (or your chosen sweetener), vanilla extract, and salt.

  4. Whip the Cream: Using an electric hand mixer or stand mixer fitted with the whisk attachment, beat the mixture on medium-high speed until light and fluffy and peaks form. This might take a little longer than whipping dairy cream. Be careful not to over-beat.

  • Optional: 1/4 teaspoon cardamom (an aphrodisiac that adds warmth and spice)

Equipment:

  • Small saucepan or mug

  • Whisk or frother

Instructions:

  1. Warm the Water: Heat the water in a small saucepan to the desired temperature, a gentle simmer works well. 

  2. Add Ingredients: Add the cacao, rose syrup, and sea salt. If using cardamom, add it now as well. Whisking continuously to prevent clumping.
